What is better than the scent of cinnamon, butter, caramel, yeast, and vanilla wafting through a kitchen in the early morning? That scent evokes memories of grandma’s kitchen, church basement potlucks, and Parisian patisseries. That scent is warm and comforting. That scent creates a powerful refuge from the harshest of winter winds. What is better than that scent? Enjoying those freshly baked breakfast pastries together as a community.
I’m Nancy Olson. I’ve spent more than twenty years in the hospitality industry. Most recently I worked at Nichole’s Fine Pastry in Fargo. I spent more than a decade in New York – most notably as the pastry chef for the award-winning restaurant Gramercy Tavern. I love baking for people. I love having the ability to nurture and excite people with my culinary artistry. I am so excited to work with APT to bring you some of my favorite breakfast pastries for a popup breakfast. I hope you’ll join us for my delicious take on toffee glazed monkey bread as featured in The Gramercy Tavern cookbook. I plan to bake ham & cheddar scones; cinnamon rolls; brioche rolls stuffed with chocolate hazelnut spread; and lemon-glazed muffins. I cannot imagine this breakfast being complete without serving my Grandma Zerr’s kuchen. I was able to share the recipe for this local specialty in November 2007’s Food and Wine magazine. It was so incredible for me to be able to share something that is a part of our local food heritage. I’ll bake my favorite: prune, as well as apricot.

We hope that this will be more than just breakfast. We hope that it will be a reason for a community of people to get together, to share, to relax, to meet APT’s artists, to enjoy each other’s company.
